Creamy True Lime-Ocado Pie - HONORABLE MENTION

Ingredients
1 refrigerated 9-inch Pie Crust, baked
1 8 ounce package cream cheese or neufchatel cheese
1/4 cup whipping cream
1/2 cup sugar
1 teaspoon almond extract
1/2 teaspoon salt
1 large (8 ounce) avocado (or 2 small)
4 packets True Lime
2 tablespoons water
Optional topping ingredients:
6 - 8 tablespoons whipped topping
1/4 cup chopped or slivered almonds
1 8 ounce package cream cheese or neufchatel cheese
1/4 cup whipping cream
1/2 cup sugar
1 teaspoon almond extract
1/2 teaspoon salt
1 large (8 ounce) avocado (or 2 small)
4 packets True Lime
2 tablespoons water
Optional topping ingredients:
6 - 8 tablespoons whipped topping
1/4 cup chopped or slivered almonds
Directions
1. Bake pie crust to directions on package for one crust. Cool.
2. In a large mixing bowl, beat cream cheese and next 4 ingredients well to a creamy consistency.
3. In a small measuring cup, empty contents of True Lime packets and add water.
4. Stir until dissolved.
5. In a medium-sized mixing bowl, mash the avocado along with the lime-flavored water.
6. Mix avocado and juices into the cream cheese mixture.
7. Beat with mixer for a creamy texture. Mixture turns nice shade of light green. Turn avocado mixture into cooled pie crust.
8. Smooth evenly. Refrigerate for at least 2 hours. Serve chilled with a sprinkle of almonds (optional) along with a dollop of whipped topping.
