DITK Pina Colada Sundae
Description
Try this for a spectacular ending to a barbecue meal – keep the grill warm for the pineapple!
Ingredients
1 ripe pineapple; cut into 1-inch rings
2 cups low-fat frozen vanilla yogurt
2 packets True Lime
1/4 cup shredded coconut; toasted
1/4 cup slivered almonds; toasted
1/4 cup whipped cream (store bought (non-hydrogenated or whipped heavy cream)
8 fresh cherries; pitted
1-1/2 tbsp. Meyer's rum (optional)
Directions
- Grill 4 pineapple rings over medium heat until lightly browned on each side; about 4 minutes per side.
- Remove from heat, coarsely chop and keep warm.
In a small dessert dish assemble sundae as follows:
1/2 cup yogurt
Sprinkle of True Lime
1/2 cup grilled pineapple
1 Tbsp. almonds
1 Tbsp. whipped cream
1 Tbsp. coconut
2 cherries
Drizzle with rum (optional)
