Summer Southwestern Salad

Good for a summer picnic or outdoor barbecue.Ingredients
| 1 cup cooked black beans 1 (11 ounce) can sweet corn 1/2 c chopped red onion 1/2 c diced or thin sliced fresh celery 1/2 c diced fresh green bell pepper 1/2 c diced fresh red bell pepper 1/4 cup chopped fresh cilantro 6 packets True Lime 1 tablespoon water dash of white vinegar 2 tablespoons salald oil salt to taste pepper to taste |
Directions
Combine all vegetable ingredients in a large bowl, add True Lime, water, vinegar, oil, salt and pepper all to taste. Adjust lime and salt to taste.
Overnight refrigeration improves blending of flavors.
