print
Description
This non-alcoholic dessert smoothie has all the flavor and deliciousness of key lime pie.
Ingredients
1 cup baby spinach leaves
4 packers of True Lime Shaker
3/4 cup milk (or non-dairy milk, such as soy milk)
1 tablespoon flax seeds, optional
1 ounce cream cheese (light or regular)
1-2 graham crackers, broken up into coarse pieces
1/4 True Lime (1 packet)
Garnish: 2-3 graham cracker sheets, broken up until the texture of sand
6 packets of True Lime
1 teaspoon cream cheese
2 Martini glasses
Directions
1. In a blender or food processor, puree yogurt, spinach, and True Lime until smooth.
2. Fill ice-cube trays with mixture and freeze for at least 2 hours.
3. Once hardened, place frozen mixture into blender or food processor along with milk (and flax seeds, if desired) and blend until combined.
4. In a small bowl, use a fork or spoon to mix together cream cheese, graham crackers, and True Lime
5. Crumble small pieces of cream cheese, graham cracker, and lime mixture into blended smoothie.
6. To prepare martini glasses: In a small plate or shallow bowl, combine graham cracker crumbs with True Lime. Take a bit of cream cheese between your thumb and forefinger and line rim of glasses. Roll glasses around in graham cracker crumb and True Lime mixture, reserving any remaining graham cracker crumbs for later.
7. For a chunky texture, pour smoothie directly into graham cracker-rimmed glasses and top with remaining graham cracker crumbs. Serve Immediately. For a smoother texture, pulse together cream cheese mixture into blended smoothie until just combined. Pour into graham cracker-rimmed glasses and top with remaining graham cracker crumbs. Serve immediately. Enjoy!
NOTE: For a thicker smoothie, use more yogurt and/or less milk. Alternately, you can puree/blend yogurt, spinach, True Lime, along with cream cheese and graham cracker mixture, freeze in ice cube trays and then blend again for a super-delicious, ice-cream like consistency! Also, for heartier texture as well as a boost of filling fiber and a dose of Omega-3's, add the optional 1 Tablespoon of flax seeds while blending together milk and frozen mixture.
