True Lemon Italian Baked Beans

A hearty and warming alternative to traditional baked beans, this dish is as nutrious as it is delicious, skipping the sugar typically found in baked bean recipes and suppyling complex proteins from the beans and vitamin C.Ingredients
8 oz. of dried cannelli or white kidney beans, soaked overnight OR 16 oz. canned beans
1 lb peeled and chopped tomatoes
2 cloves crushed garlic
2 packets True Lemon
2 tbs chopped mixed herbs (basil, oregano, thyme) or 1 tbs dried
1/2 cup extra virgin olive oil
salt and pepper to taste

Directions
Cook soaked beans by simmering until until tender, about 50 mins.
Drain well. For canned beans, drain well.
Preheat oven to 400 degrees.
Place beans in a large greased baking dish. Mix in remaining ingredients. Season to taste with saltand pepper.
Bake 45 minutes. Serve hot.
