    True Lemon Tuna and Arugula Linguini

    Description

    Just grab a bag of arugula at the supermarket --the rest you probably already have on hand. A filling, nutritious and delicious meal in about half an hour!

    Ingredients

    12 ounces linguine
    1/2 cup olive oil
    6 garlic cloves, minced
    1/2 teaspoon dried crushed red pepper
    2 12-ounce cans tuna packed in water, drained
    8 packets True Lemon
    4 cups arugula


    Directions

    1. Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain, reserving 1/4 cup cooking liquid. Return pasta to pot.

    2. Meanwhile, heat oil in heavy large skillet over medium-high heat. Add garlic and crushed red pepper. Sauté 30 seconds. Add tuna; stir to heat through.

    3. Add tuna mixture, True Lemon, and arugula to pasta. Toss over low heat just until arugula wilts, about 2 minutes. Add reserved pasta cooking liquid to moisten. Season to taste with salt and pepper and serve.

    This was so delicious and easy. I added 1/2 of a red onion, sauteed and topped the dish with shredded romano cheese. It's become a big favorite. I love True Lemon!

    This has become one of my favorite pasta dishes. Fresh, light and oh so flavorful.
