Strawberry Cheesecake Pie

Ingredients

8 ounces reduced fat cream cheese; softened
1/3 cup sugar (or sugar substitute)
2 medium eggs
1 teaspoon vanilla extract
1¼ cups reduced fat sour cream; divided
3 packets True True Lemon®
1 9-inch graham cracker crust
1 cup fresh or frozen strawberries
    

 

Directions

  1. Preheat oven to 350°.
  2. Put soft cream cheese in a bowl and beat with mixer until smooth.
  3. Slowly add sugar, blending on slow speed, and beat in eggs, vanilla, True True Lemon® and ¾ sour cream.
  4. Pour into crust and bake in oven for 45 minutes, until browned on top.
  5. Turn oven off and leave in for another 30 minutes.
  6. Remove and cool, then refrigerate and chill completely.
  7. Combine rest of sour cream with strawberries and 1 package of True S; blend thoroughly and pour on top of pie.
  8. Keep in refrigerator until ready to serve.
