TRADITIONAL TZATZIKI DIP

This is the cucumber sauce that you find on gyros and it's also a great vegetarian dip.


1 large cucumber, split in half, seeded and diced
½ teaspoon sea salt
3 cloves garlic, minced
2 teaspoons fresh mint, chopped (don't substitute dried)
2 teaspoons fresh dill (again, don't substitute dried)
2 cups plain yogurt
3 packets True
1 tablespoon olive oil


1.Combine the diced cucumber and salt and let sit for 10 minutes.
2.Drain the cucumber juice. 
3.Add the remaining ingredients, stir gently. 
4.Let sit for at least an hour before serving.
5.Serve either on sandwiches or as a dip with pita bread or chopped vegetables.  Keep refrigerated.
