True Lemon® MINI-CHEESECAKES


12 vanilla wafers
½ cup sugar
1 egg
2 8-ounce package cream cheese
1 teaspoon vanilla extract
5 packets True Lemon®

1. Preheat oven to 325°.
2. Line muffin tins with cupcake liners.
3. Place a vanilla wafer in each liner.
4. Mix True Lemon, cream cheese, vanilla, sugar and egg until well blended.
5. Pour over wafers; filling each ¾ full.
6. Bake 25 minutes
7. Remove from pan when cool.
8. Chill.
