Tangy Lemon Couscous by Sandra Parkington, MPH, RN

- 1 cup whole wheat Couscous
- 1 cup Low-Sodium Chicken Broth (70 mg sodium per cup)
- 2 Tbsp Unsalted Butter/Margarine
- (Use Olive Oil to lower saturated fat/cholesterol)
- 1/2 to 1 tsp True Lemon®

- Combine chicken broth and couscous in a microwave safe dish
- Add melted butter or olive oil and True Lemon
- Stir well
- Microwave on HIGH for 3 1/2 minutes
- Fluff with fork and serve
- May sprinkle extra True Lemon¨ on top, to taste

- Makes 5 - 1/2 cup servings
