True Lemon® GREEK STYLE POTATOES


2 pounds Yukon Gold potatoes quartered and peeled
(skin may be left on if desired)
¾ cup water
4 packets True Lemon®
½ cup finely chopped shallots
½ tablespoon dried thyme
¾ teaspoon kosher salt
1 tablespoon plus 2 teaspoon olive oil
2 tablespoons chives
1 bay leaf
Black pepper

  1. Preheat oven to 375°
  2. Place potatoes in large shallow baking dish
  3. Combine water, True Lemon®, shallots, thyme, salt and 1 tablespoon of the olive oil
  4. Pour over potatoes and place bay leaf on top of potatoes
  5. Bake, stir occasionally until potatoes have absorbed all of the liquid and are very tender (about 1 hour)
  6. Toss the potatoes with chives and the remaining 2 teaspoons olive oil and return to the oven
  7. Bake for 10 minutes longer or until glazed and golden
  8. Discard the bay leaf
  9. Sprinkle with pepper and serve at once
