TRUE LEMON® SUPER FAN DAVID PERREAULT

Meet November’s True Lemon® Super Fan, David Perreault, of Port Orange, FL! David first came across True Lemon® on the internet. Now he uses True Lemon® just about every day in water, sprinkled on chicken, fish, and shrimp, and adds it to dips and sauces.

“I love it mixed into yogurt and vanilla pudding. It makes great lemon custard. I recently added True Lemon® in place of lemon juice in a Pad Thai recipe. My guests were surprised to see me use this product instead of real lemon. It was a hit! Sprinkling True Lemon® over the finished dish gave a great “pop” of flavor and less acid than fresh lemon juice. I also use two packets with two Splenda® packets in a large glass of water and ice – it makes great lemonade. I think this is such a great product that I’ve told my mom and all of my friends that cook about True Lemon®.”

David has even created a Lemon Caper Cream Sauce to put over broiled fish (see recipe below). “I live in Florida where I can walk to a friend’s house and pick limes and lemons off the trees. I really like the simplicity of True Lemon®. The consistency of flavor is hard to predict with a regular lemon or Lime. When cooking with lemon/limes, the flavor is obtained by combining the juice with the zest. I have found this to be difficult and messy. Most of the time I end up with an acidic and bitter taste that is hard to identify as lemon/lime. I keep True Lemon® packets right by the stove and use them to cook and season regularly. The lemon taste comes through with less acid and the flavor is genuine.”

David’s Lemon Caper Cream Sauce Ingredients:

2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk; heated but not hot
1/3 cup heavy cream
2 tablespoons capers
3 or more packets True Lemon®
3 tablespoons Chardonnay white wine
fresh Italian parsley (garnish)
salt (to taste)
white pepper (to taste)

Directions

  1. Melt butter in saucepan over medium heat.
  2. Add flour and stir until mixture is well blended.
  3. Gradually stir in hot milk. Cook over medium heat, stirring constantly (I use a whisk to stir, until sauce begins to boil and thicken).
  4. Simmer, stirring frequently, over very low heat for 5 minutes.
  5. Stir in cream and wine.
  6. Season with fresh ground pepper. (Wait on the salt – you could add more True Lemon® to avoid salt.)
  7. Add 3 packets True Lemon® (more or less to taste).
  8. Pour over broiled fish (I think its best with grilled tuna).

Servings: About 1¼ to 1½ cups of medium thick sauce.
