Easter has come and gone, and now you’re left with a fridge full of beautifully decorated eggs – but what to do with all of them?
Well, don’t let them go to waste – they’re full of good fat and plenty of protein, and are perfect for a quick on-the-go snack.
Use as a quick filling for breakfast burritos.
Hard-boiled eggs make an easy substitute for scrambled! In a large tortilla, add the roughly chopped eggs, black beans, tomato salsa, chopped peppers, avocado, and shredded cheese. Wrap tightly and sear in a lightly oiled pan on the stove for 5-minutes on both sides until warm.
Mini egg pizzas.
Toast an english muffin, and top with tomato slices, fresh basil leaves, sliced hard-boiled eggs, and a sprinkling of mozzarella cheese. Season with a little True Lemon Pepper then place in the oven on broil for a few minutes until the cheese is melted. This also works great in a toaster oven!
Make a “breakfast salad.”
It may sound strange, but having salad for breakfast is a great way to get a big boost of nutrition before going about your day. On a bed of mixed greens add sliced eggs, diced avocado, about 1-ounce of smoked salmon, goat cheese crumbles, a sprinkle of True Lemon, and a drizzle of olive oil. This might just turn out to be your new favorite breakfast dish.
As a soup or chili topping.
Chopped eggs are a wonderful texture on top of chunky chili or mild and creamy soups. It’s also an excellent way to add an extra boost of protein for energy!
A savory Scotch (style) egg!
Wrap a peeled hard-boiled egg with a slice of bacon, and fry in a pan over medium-high heat. Set aside to drain, and serve on top of a fresh bed of arugula, or sauteed collard greens.
True Lime, Garlic & Cilantro deviled eggs.
This one never gets old! Peel eggs, slice in half, and scoop out the yolks. Add to a bowl with a dollop of mayo, and a generous sprinkling of True Lime, Garlic & Cilantro. Blend with a hand mixer until creamy, then scoop the filling back into the eggs. Garnish with some extra fresh chopped cilantro, if desired!
