Ingredients
3 graham crackers
1 1/2 tbsp butter (melted)

1 packet True Lemon Crystallized Lemon
1/2 cup cream cheese (room temp)
2 tbsp powdered sugar

2 packets True Lemon Crystallized Lemon
5 egg yolks
1 cup sugar
1/2 cup water

4 tsp of Crystallized Lemon
1 stick of unsalted butter
1 lemon zest

Crust
Place the graham crackers in a ziplock bag and crush them using a rolling pin or any other heavy object until you have fine crumbs.
In a mixing bowl, combine the crushed graham crackers, melted butter, and the packet of True Lemon Crystallized Lemon. Mix well until the crumbs are evenly coated.
Pour the crust mixture into your cup. Use the back of a spoon or your fingertips to press the crust firmly onto the bottom of the bowl, ensuring an even layer.
Cheesecake
In a mixing bowl, combine the cream cheese and powdered sugar. Using a whisk or an electric mixer, beat the mixture until smooth and creamy.
Add the packets of True Lemon Crystallized Lemon to the cream cheese mixture. Make sure to incorporate the lemon crystals evenly into the mixture.
Continue whisking or mixing until all the ingredients are well combined, and the mixture has a velvety consistency.
Once the mixture is smooth and well-balanced, it's ready to be placed on top of the crust!
Lemon Curd
In a medium sauce pan, add egg yolks and sugar. Stir over low heat until combined. Add water.
Mix in True Lemon and chopped up butter. Turn up heat and mix until it comes to a simmer. Add lemon zest.
Pour mixture through sift. Allow to chill in the fridge for two hours.
Add to the top of the cheesecake and enjoy!
