What do you do with the last of the watermelon that didn't get eaten? You can turn it into a salad! One of the good things about day old watermelon is that it sits in its own juices and becomes more flavorful. When making this salad, it is all about layering everything. Like nachos, no one wants the one chip without the cheese. So, when making this salad, cut everything in half and build it on top of each other. This will give you flavor throughout the whole dish.

Ingredients
6oz 1 day old watermelon, cut into 1 inch cubes

2 tsp True Lime
2 tsp chili rub
2 oz crumbly cheese; such as cotija or feta
- 1 oz shallots or red onions cut into 1/8in strips
- 1/2 oz cilantro
- Salt to taste
Directions
- Start with 3 oz watermelon and lay flat on a plate.
- Spice evenly with 1 tsp true citrus, 1 tsp chili mix, 1/2 oz shallots and 1 oz crumbly cheese.
- Repeat the process and top with salt and cilantro.
