Pumpkin and lime are combined to make an unusual yet deliciously filling dip. Serve with seasonal vegetables and pita chips! Recipe submitted by: Mary Leverett.
2 tablespoons tahini
4 packets True Lime
1 teaspoon ground cumin
3/4 teaspoon salt
1/8 teaspoon ground red pepper
1 (15-ounce) can pumpkin puree (not pie filling), or 2 cups freshly cooked pumpkin puree
1 (15-ounce) can chickpeas, 1/4 cup reserved as garnish
1 garlic clove
Fresh rosemary (optional), as garnish
Pita chips or fresh vegetables for serving
In a food processor, combine all ingredients and puree until very smooth. Garnish with reserved 1/4 cup of chickpeas, and fresh rosemary if desired!
