Black Bean and Corn Salad

This is a delicious (and nutrient-dense) dish to throw together as a side dish. It’s also great when served with a side of tortilla chips for scooping!


15 oz can black beans, drained and rinsed
11 oz can whole golden corn, golden, drained (frozen works great too!)
1/2 a medium tomato, chopped
1/2 a red or green pepper, diced
1/4 cup fresh cilantro, chopped
1/4 of a small red onion, diced
6 packets of True Lime
2 tablespoons olive oil
1 pinch each of salt and pepper (to taste)


Using a large bowl, mix together all the ingredients. This salad is best refrigerated until it’s ready to be served, to let the flavors meld together.
