Build-Your-Own True You Salad

Description

A lean and green formula for a healthy and delicious meal. You can combine many different variations to maximize nutrition without the risk of getting bored!

Here’s how it works:

1. Choose your base (2-3 cups)

  • Romaine
  • Spinach
  • Arugula
  • Mixed Greens
  • Kale
  • Radicchio
  • Cabbage
  • Endive
  • Butter Lettuce
  • Super Green Mixes

2. Add a pop of color (1-2 cups; aim for a variety of colors)

  • Peppers
  • Cucumbers
  • Mushrooms
  • Onions
  • Banana Peppers
  • Hearts of Palm
  • Radish
  • Carrots
  • Jicama
  • Sprouts
  • Cauliflower
  • Tomatoes
  • Broccoli
  • Carrots
  • Parsley
  • Squash

3. Select your protein for added boost (3-5 ounces or the size of the palm of your hand)

  • Chicken
  • Turkey

  • Beans/Lentils

4. Sweeten it up (1/2 cup for fresh fruit or 1/4 cup for dried fruit)

  • Berries
  • Mandarin Oranges
  • Citrus

  • Currants
  • Apple
  • Pear
  • Mango
  • Pineapple

5. Add superfood fats (1/4 cup mix and match)

  • Almonds
  • Walnuts
  • Pecans
  • Hazelnuts
  • Cashews
  • Pistachios
  • Avocado
  • Coconut
  • Flax
  • Chia Seeds
  • Hemp Hearts
  • Sunflower Seeds
  • Pumpkin Seeds
  • Feta Cheese
  • Parmesan Cheese
  • Blue Cheese

6. Toss with a healthy dressing (2-3 ounces; choose 1 option below)

Combine all ingredients in a mason jar. Cover and shake to mix. Toss with any salad to coat, as desired. Refrigerate remaining dressing.

Option #1: 1 tbsp extra-virgin olive oil + 1 tbsp apple cider vinegar + 1 tsp of honey + 2 packets True Lemon + a dash of sea salt and pepper

Option #2: 1 tbsp extra-virgin olive oil + 1 tbsp balsamic vinegar + 2 packets True Lemon + 1 tsp dijon mustard + 1 tsp honey + dash of sea salt and pepper

Option #3: 1 tbsp extra-virgin olive oil + 1 tbsp white wine or champagne vinegar + 2 packets True Orange + ½ tsp dijon mustard + dash of sea salt and pepper

Option #4: ¼ cup water + ¼ cup chopped red onion + 3 tbsp dijon mustard + 4 packets of True Lemon + 2 tbsp olive oil + 2 garlic cloves (minced) + dash of sea salt and pepper
