Chicken and Avocado Lime Soup


A spicy and filling soup with unique True Lime flavor!


1 large onion, diced
2 ribs celery, diced
2 tbsp of minced garlic
3 tbsp olive oil
2 quarts chicken stock
2 skinless, boneless chicken breasts, cooked and shredded into small pieces
8 packets of True Lime 
1 tbsp ground cumin
1 tbsp paprika
1/4 tbsp cayenne pepper
2 diced avocados
1/4 cup frozen corn, thawed
Crispy corn tortillas, crushed
Fresh cilantro (as garnish)

  1. In a large soup pot, sautee the onions and celery until transparent in the olive oil.
  2. Add the chicken, spices, and the broth, bring to a boil and simmer for at least 15 minutes.
  3. Stir in the True Lime.
  4. In a bowl, gently mix the avocado and corn.
  5. Pour the soup into bowls, and divide avocado and corn topping on each. Garnish with the crispy tortillas and fresh cilantro and enjoy!
