Cranberry Citrus Glazed Bread


Moist and delicious in every bite. Makes for a great autumn dessert! Recipe submitted by Jennifer Rodriquez.

For the cake: 
1/4 cup butter, softened
3/4 cup white sugar
2 eggs
1 packet True Orange
2 cups flour
1 teaspoon salt
2 1/2 teaspoons baking powder
1 teaspoon vanilla
3/4 cup milk
1/2 cup chopped almonds
1 cup fresh cranberries (or frozen, thawed)
For the frosting (optional):
2 tablespoons sugar
1 teaspoon vanilla extract
1 packet True Orange
  1.  Preheat oven to 350 degrees. Lightly coat 9×5 inch loaf pan with butter spray.
  2. Cream the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time and then stir in one packet of True Orange.
  4. In a separate bowl, sift together the flour, salt and baking powder.
  5. Alternate adding the flour mixture and milk into the egg mixture. Gently add in the nuts and cranberries.
  6. Pour into prepared loaf pan. Bake for 50 to 55 minutes.
  7. Meanwhile, in a small bowl combine the sugar and one packet of True Orange with the vanilla extract. Spoon glaze over loaf once it has cooled.
