Healthy and full of flavor – with the added zing of True Orange. Try it as a side dish or as your main course with a side of fresh crusty bread!
4 cups fresh baby spinach
1/2 cup chopped walnuts, or toasted slivered almonds
1/4 cup dried cranberries
1/4 cup crumbled feta or goat cheese
1 apple, thinly sliced
For the vinaigrette:
4 packets True Orange
4 teaspoons of white wine or champagne vinegar
4 teaspoons olive oil
1/2 teaspoon Dijon mustard
Dash of salt
1/2 teaspoon fresh chopped rosemary (optional)
- Combine the vinaigrette ingredients in a small bowl, and whisk to combine. Set aside.
- Divide spinach among four salad plates. Sprinkle with all the toppings, and serve with a side of the dressing. This salad can all be combined in a large bowl and tossed with the dressing, if desired.
