Diane Henderiks’ Creamy Sundried Tomato Spread


A rich but healthy spread for crackers or raw vegetables. Recipe courtesy Diane Henderiks, RD / Dietitian-in-the-Kitchen.


1/4 cup sun-dried tomatoes, blanched and drained
8 ounces low-fat cream cheese, at room temperature
1/2 cup finely chopped walnuts
1/3 cup dry white wine
2 cloves garlic, minced
1/4 teaspoon True Lemon (one packet)
1 teaspoon of hot pepper flakes
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/3 cup fresh basil, finely chopped
Crackers, crostini, or fresh sliced vegetables for serving

  1. In a food processor combine first 6 ingredients (sundried tomatoes through True Lemon), then process until well-blended.
  2. Add mixture to a large bowl and stir in hot spice, salt, pepper, and basil.
  3. Chill for about 1 hour.
  4. Serve with crackers, crostini, and/or raw veggies. Enjoy!
