This pasta salad is simple to make, and a delicious side dish for any spring or summertime gathering. Submitted by Jennifer Stobbs.
For the Salad:
2 lbs uncooked tri-color pasta of choice
2 small onions or 1 large onion, chopped
1 yellow or green bell pepper, diced
1 medium to large tomato, diced
1/4 cup fresh parsley, chopped
1 cup feta cheese
For the Dressing:
1/3 cup olive oil
2-4 packets True Lemon packets
2 tablespoons vinegar
1/2 teaspoons dried oregano
1/2 teaspoons salt
- Cook pasta and let cool completely.
- Mix the dressing ingredients and set aside.
- Toss the pasta with the veggies, parsley, and feta cheese.
- When ready to serve, add dressing and toss.
