The earthy taste of pine nuts contrasts beautifully with the sweet flavor of green beans. Recipe adapted from Kitchen Parade.
1 cup of water (approximately)
1 pound fresh or frozen green beans
1/4 cup toasted pine nuts
2-4 packets of True Lemon (depending on how strong a lemon taste is preferred)
1 tablespoon olive oil
Fresh chopped parsley
Salt and pepper to taste
- In a large saucepan, bring the water to a boil over medium-high heat (add more if needed). Add some salt, then the beans. Cover and let simmer for about 10-minutes.
- Drain the beans and return to the pan. Stir in the remaining ingredients. Serve warm.
When toasting pine nuts, keep a very close eye on them! They burn very quickly, so remember to keep them moving constantly. Remove the pan from heat before they are completely finished, as the pan will stay warm and continue to toast them.
