A cool and refreshing treat on a hot day! Recipe submitted by Lois Silverman.
2 cups low-fat buttermilk
1/4 cup Splenda
2 – 3 packets True Lemon
1 fresh pear, finely chopped (or any other seasonal fruit)
- Whisk all ingredients except fresh fruit until well blended.
- Gently stir in the fresh fruit chunks.
- Pour into popsicle molds, or small paper cups. Place in the freezer for about 1-hour until firm.
A great recipe for those trying to cut back on sugar, or for diabetics! Delicious with chunks of fresh fruit – try with anything you have on hand, such as berries or melon.
For a different twist, omit the Splenda and instead substitute 2-3 packets of True Watermelon Aqua Fresca (already naturally sweetened). Use fresh chopped watermelon as the fruit chunks!
