Light and Fresh Salad

30 day challenge with a trueyou light fresh salad

We love this salad when we’re too hungry or on days when we’re not as active. It’s light and refreshing!


For the salad: 

  • 2-3 cups of arugula
  • 1-2 cups mixed veggies: cucumbers, sprouts, tomatoes, red peppers, cilantro or parsley
  • Sprinkle of toasted almonds
  • ½ cup chilled quinoa
  • ½ sliced pear
  • ½ can albacore tuna (optional)
  • white kidney beans (optional)

For the dressing:

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon white wine or champagne vinegar
  • 2 packets of True Orange
  • 1/2 teaspoon dijon mustard
  • dash of sea salt
  1. Assemble salad: arugula, cucumbers, sprouts, tomatoes, red peppers, cilantro (or parsley), chilled quinoa, and almonds.
  2. Combine all dressing ingredients in a mason jar. Cover and shake to mix.
  3. Drizzle 2-3 ounces of dressing over salad and serve.
  4. Refrigerate remaining dressing.
