Dig in! This lightweight summer dessert is full of wonderful and refreshing flavors. Recipe submitted by Susan Scarborough.
4 cups water, warmed
8 packets True Lemon
8 packets True Lime
3/4 – 1 cup sugar (or other natural sweetener, like honey)
3 tablespoons chopped mint leaves
2/3 cup fresh blueberries
2/3 cup fresh raspberries
- Mix True Lemon, True Lime, water, and sugar in a pitcher. Stir until dissolved.
- Pour mixture into a shallow casserole dish with mint and blueberries, mashing blueberries some with back of a spoon.
- Freeze for one hour, then remove and stir in the raspberries. Freeze again for at least 30 minutes, until ready to serve.
- Scrape into serving glasses, and garnish with fresh mint leaves.
For a fun presentation: rim the edge of a serving glass with sugar first! For the adults you can also add a drizzle of Lemoncello liqueur on top before serving.
