Crunchy cabbage gets dressed up with some additional sweet treats, and a tangy orange-ginger dressing.
For the salad:
1 medium head red cabbage, shredded
1/2 cup crushed pistachios (or any other nuts you have on hand)
1/4 cup dried cranberries (or raisins)
1 shallot, finely diced
1 apple, chopped or julienne
For the dressing:
1 tbsp white sugar
2 tbsp True Orange Ginger spice blend
1 cup mayonnaise
1 cup rice vinegar
Salt & pepper to taste
- In a large mixing bowl, whisk together the vinegar and sugar until sugar has dissolved. Add mayonnaise and whisk briskly until smooth.
- Add True Orange Ginger, salt, and pepper to taste.
- Mix in cabbage, apple, pistachios, shallot, and cranberries.
- Cover in refrigerator for 1 hour, tossing every 20 minutes or so.
