Lean-mean-green machine broccoli gets dressed up in a spicy and zesty dressing, then tossed with toasted walnuts and sliced scallions. A healthy and delicious side dish for any meal.
2 large heads of broccoli, washed and trimmed
1 tablespoon peanut oil
1 tablespoon soy sauce (use Tamari if making gluten-free)
1 tablespoon honey
1 tablespoon True Orange Ginger spice blend
3 tablespoon water
1 medium garlic clove, peeled and minced
1/2 teaspoon salt
2/3 cup walnuts, toasted and chopped
2 medium scallions, thinly sliced
4 strips of bacon, cooked and chopped (optional)
- Whisk together oil, soy sauce (or Tamari), honey, True Orange Ginger, garlic, and salt in a large bowl.
- Fill a pot with a little bit of water, and insert a steamer basket. Fill with broccoli and cover. Steam for about 5-8 minutes.
- When cooked, place broccoli in the bowl with the dressing ingredients and toss to combine. Mix in the scallions.
- Just before serving, top with walnuts and bacon bits (optional). Serve warm or at room temperature.
