Sweet True Lime Scallops

sweet True Lime scallops

A beautifully colored dish, packed with rich and intense flavor. Best when served over steamed jasmine rice, or a bed of fresh greens. Recipe submitted by Leslie Delemeester.

1 1/2 lbs fresh or thawed scallops
3 tablespoons vegetable oil
2 tablespoon brown sugar
1 tablespoons brown mustard
1/2 teaspoon freshly ground black pepper
6 packets True Lime
1 orange or red bell pepper, diced
1 small yellow mango, chopped (frozen works fine!)
1 cup jasmine rice, cooked
  1. Prepare rice, and set aside.
  2. In a medium bowl, mix together the vegetable oil, brown sugar, brown mustard, black pepper, and True Lime. Stir in the scallops to coat well.
  3. In a large skillet over medium-high heat, saute the scallop mixture and sliced sweet bell pepper for about 5 minutes, or until scallops are cooked through.
  4. Remove skillet from heat and stir in the chopped mango. Serve immediately over rice.
