This no-cook, spicy & pea-nutty treat is perfect as a dipping sauce for chicken, shrimp, pork, and raw veggies, when tossed with your favorite noodles, or drizzled over a salad for a delicious dressing. Yum!
1 1/2 cups creamy peanut butter
1/2 cup coconut milk
3 tablespoons water
5 packets of True Lime dissolved in 3 tablespoons water
3 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon hot sauce
1 tablespoon minced fresh ginger root
3 cloves garlic, minced
1/4 cup chopped fresh cilantro
chopped peanuts (optional)
In a bowl, mix all ingredients except the cilantro, which should be added just before serving. Top with chopped peanuts (optional).
