True Chips – Potato or Sweet Potato Chips

Description

Indulge in these homemade baked chips that have just the right touch of zesty orange or tangy lime flavor. A healthy way to enjoy your guilty pleasure! Recipe submitted by Al Barnhart.

Ingredients

White potato version: 
1 pound red or russet potatoes
4 packets True Lime
3 tablespoons water
1 tablespoon canola (or other unflavored) oil
1 teaspoon coarse salt

Sweet potato version: 
1 pound sweet potatoes
4 packets True Orange
3 tablespoons water
1 tablespoon canola (or other unflavored) oil
1 teaspoon coarse salt

Directions

This method works for both types of potatoes: 

  1. Peel potatoes and slice 1/8 thick (a mandolin slicer makes this easy).
  2. Place potatoes in single layer on rimmed cookie sheet.
  3. In a small cup, mix True Lime or True Orange (depending upon potato as indicated above) with water and drizzle over potatoes, turning slices once to coat both sides.
  4. Refrigerate for 30 minutes. Meanwhile, preheat oven to 450 degrees F.
  5. Drain potatoes well and pat dry.
  6. Place potatoes, oil, and salt in a medium mixing bowl and toss to coat. Spread in a single layer on a non-stick cookie sheet and bake for 15 minutes.
  7. Rotate sheet 180 degrees (half way around) and bake for 10 minutes longer or until crisp.
