Another take on crunchy coleslaw—this one with the added flavor of sweet peppers and a creamy sauce. Submitted by Jessica Tropp.
1/2 head red cabbage, very thinly shredded or sliced
1 red, yellow or orange bell pepper, very thinly sliced
1 large or 2 medium carrots, shredded
1/4 cup mayonnaise
1/4 cup milk
3 packets True Lemon
3 tsp sugar or 3 packets sugar substitute
- Toss vegetables together in a large bowl.
- Whisk milk and mayonnaise together until smooth.
- Sprinkle in True Lemon and sweetener and stir thoroughly.
- Add dressing to salad and toss gently until well mixed.
