Granita is a hot-weather treat from Italy. Though it is served as dessert, this is really just a very slushy (but delicious) drink!
7 cups watermelon (cut into 1-inch chunks)
1/3 cup sugar, or other natural sweetener
2 packets of True Lemon dissolved in 1 tablespoon of water
1 tablespoon fresh tarragon leaves, optional
Fresh mint leaves, as garnish
- In blender, puree watermelon, sugar, True Lemon juice, and optional tarragon leaves.
- Pour into 13 by 9 inch metal or glass pan.
- Freeze for 1 hour, then stir with fork. Freeze until firm, then scrape with fork into shards.
- Serve with fresh mint leaves, and additional watermelon slices.
