True Lime Corn and Black Bean Salsa

A delightful, versatile, healthy salsa.


1 can black beans, rinsed and drained
1 can corn, drained (or a package of frozen corn kernels)
4 fresh tomatoes, diced
1 jalapeno pepper, de-seeded and chopped
1/2 cup red onion, chopped
1/2 cup cilantro, chopped
4 packets of True Lime
1/2 tsp salt
1/4 tsp freshly ground black pepper
2 dashes of hot sauce (optional)


Combine all the ingredients.

Use it as is for a salsa, or serve it over hot brown rice for a hearty side dish. Add cooked, diced chicken to the rice/salsa dish and serve in warm tortillas. Yum!
