Refreshing and festive, this punch combines fresh mint and pineapple for a special party treat.
1/2 cup sugar
1/2 cup water
3 quarts pineapple juice
1 liter gin
1 liter club soda
8 packets True Lime dissolved in 1 cup of water
1 cup fresh mint leaves
Ice, for serving
- In a small saucepan, make the simple syrup by combining the equal parts of sugar and water; bring to a boil. Reduce heat and simmer until the sugar dissolves, 1 to 2 minutes. Set aside to let cool.
- In a large bowl, combine the simple syrup, pineapple juice, gin, club soda, True Lime water, and most of the mint (reserve some as garnish).
- Serve over ice. Garnish with a sprig of fresh mint.
