This salad is healthy and gorgeously green! A feast for the eyes, and the belly. Recipe adapted from The Family Kitchen.
10 oz (approximately) of fresh arugula
1 avocado, diced
1 green apple, diced
2 kiwis, diced
2 tablespoons roasted pistachios (optional)
1 small cucumber, peeled, seeded, and diced
2 fresh mint springs, remove and chop leaves
1 tablespoon maple or agave syrup
6 packets True Lime dissolved in 3 tablespoons water
Additional mint for garnish
- Prep all ingredients (except the last three on the list), and place in a large bowl.
- In a small bowl, whisk together the True Lime juice with the maple or agave syrup.
- Serve immediately or cover and chill until ready to serve. Toss with the dressing just before serving. Garnish with fresh mint leaves.
