True Lime-Mint Spring Green Fruit Salad

True Lime mint spring green fruit salad on a purple plate

This salad is healthy and gorgeously green! A feast for the eyes, and the belly. Recipe adapted from The Family Kitchen.


10 oz (approximately) of fresh arugula
1 avocado, diced
1 green apple, diced
2 kiwis, diced
2 tablespoons roasted pistachios (optional)
1 small cucumber, peeled, seeded, and diced
2 fresh mint springs, remove and chop leaves
1 tablespoon maple or agave syrup
6 packets True Lime dissolved in 3 tablespoons water
Additional mint for garnish

  1. Prep all ingredients (except the last three on the list), and place in a large bowl.
  2. In a small bowl, whisk together the True Lime juice with the maple or agave syrup.
  3. Serve immediately or cover and chill until ready to serve. Toss with the dressing just before serving. Garnish with fresh mint leaves.
