True You Body Bowl with True Lime Spicy Peanut Sauce

For the base: 

  • 3-6 ounces of cooked chicken
  • 1-2 cups mixed spiralized zucchini and quinoa
  • purple cabbage, sliced
  • onions, sliced
  • mushrooms, sliced
  • parsley
  • sprouts
  • butternut squash, cubed

For the sauce: 

  • 4 tablespoons reduced fat peanut butter (creamy or chunky)
  • 3 teaspoons soy sauce
  • 1 packet True Lime
  • 1/4 – 1/2 teaspoon red pepper flakes
  • 4 tablespoons water
  1. Sauce: mix together peanut butter, soy sauce, True Lime and red pepper flakes. Microwave for 30 seconds. Stir or whisk with fork. Add water to desired consistency.
  2. Arrange base: zucchini, quinoa, onions, purple cabbage, mushrooms, sprouts and butternut squash.
  3. Add sliced chicken on top.
  4. Sprinkle on parsley.
  5. Drizzle sauce over bowl.
