True You Dinner Tray with True Lemon Ginger-Soy Marinade

For the base: 

  • 2 salmon fillets
  • onions, sliced
  • leeks (or shallots)
  • garlic, chopped
  • sweet potatoes, cubed
  • fennel, halved
  • cauliflower, chopped
  • carrots, sliced
  • green beans

For the marinade:

  • 1/2 cup of soy sauce
  • 1/2 cup of rice wine vinegar
  • 1/3 cup of olive oil
  • 2 tablespoons of honey
  • 1 tablespoon¬†peeled and grated fresh ginger
  • 4 packets of True Lemon
  • 2 tablespoons of water
  • 1 teaspoon of garlic powder
  • 1 teaspoon of sesame oil
  • 1/4 teaspoon of cayenne pepper
  1. Combine all marinade ingredients and pour into a plastic bag with salmon fillets and let sit at room temperature for 1 hour.
  2. Preheat oven to 375 degrees.
  3. Chop and slice veggies and toss with True Lemon Pepper Spice Blend.
  4. Arrange veggies on a cooking sheet.
  5. Drain salmon and pat dry with paper towel. Place on top of veggies.
  6. Cook 20-40 minutes or until salmon is done. Broil for last 5 minutes to add a bit of crisp.
