This dish is fantastic served hot, or cold as leftovers.
3 cups cooked linguine noodles, or whatever type of noodles you have on hand
1 can tuna fish, drained
2 tablespoons capers, drained
1/4 cup olive oil
3 packets True Lemon, dissolved in 2 tablespoons water
1 large garlic clove, minced
1/2 a red bell pepper, minced
1/2 teaspoon salt and pepper (or to taste)
1/4 cup fresh parsley or chives, chopped
Grated Parmesan cheese
- Cook pasta according to package directions, drain, and rinse with cool water.
- Meanwhile, break tuna chunks up into bite-sized pieces. Add to a large bowl with garlic, bell pepper, capers, True Lemon water, olive oil, and salt and pepper. Gently stir, taking care to not mash the capers.
- Combine noodles with the tuna mixture, and gently stir together.
- Garnish with Parmesan cheese and fresh chopped herbs.
