Preheat oven to 350 degrees F. Line 24 cupcake pans with paper liners.
In a large mixing bowl, combine the cake mix, eggs, water, oil, pudding, yogurt, and True Lime packets. Beat on a medium speed for a few minutes. Fill cupcake papers 2/3 full with batter.
Bake for 17-19 minutes until toothpick inserted in center comes out clean. Remove from pan and cool cupcakes
Meanwhile in a large mixing bowl, beat together the butter, confectioners sugar, vanilla and True Lime packets. Add a very small amount of food coloring (1-2 drops) just to get a light green color.Frost cupcakes with a spatula, or with pastry bag. Add sprinkles, if desired!
This recipe is easily adaptable for any True Citrus products. Use orange food coloring and True Orange, yellow food coloring and True Lemon, or pink food coloring and True Grapefruit!
