Tangy and delicious, and best of all, covered in melted cheese! Recipe submitted by Bev B.
4-6 chicken breasts (skinless, boneless)
1 cup salsa
10 tablespoons bottled Ranch Dressing
2 teaspoons from True Lime shaker
2 cups sharp cheddar cheese, shredded
Fresh chopped cilantro
Fresh chopped jalapenos (optional)
1-2 tablespoons olive oil
- Brown chicken in olive oil in a large skillet, turning once.
- Flip for a third time, and cover with grated cheese. Cover skillet and cook until chicken is done.
- Mix salsa, ranch dressing, and True Lime in a separate bowl.
- Remove chicken from skillet, and sprinkle with cilantro and jalapenos (if desired). Serve with the salsa mixture on the side.
This recipe is fantastic when served with a side of brown rice, and cooked black beans.
