This is the creamy cucumber sauce that you find on gyros, and served on the side for many Mediterranean meals. It also makes great vegetarian dip! Recipe from The North County News.
1 large cucumber, split in half, seeded and diced
1/2 teaspoon sea salt
3 cloves garlic, minced
2 teaspoons fresh mint, chopped
2 teaspoons fresh dill
2 cups plain yogurt
3 packets True Lemon
1 tablespoon olive oil
- Combine the diced cucumber and salt and let sit for 10 minutes, then drain off the cucumber juice.
- Add the remaining ingredients, stir gently. Let sit for at least an hour before serving.
- Serve either on sandwiches or as a dip with pita bread or chopped vegetables. Keep refrigerated.
