True Lime Cupcakes

True Lime cupcakes on a woven placemat

A refreshingly indulgent taste in every bite with this wonderful citrusy flavor! Recipe submitted by Pamela Shank.


For the cupcakes:
1 (18.25 oz) box yellow cake mix
4 eggs
1/2 cup water
1/2 cup vegetable oil
1 (4 oz) box vanilla instant pudding
1 (6 oz) container key lime yogurt
10 packets True Lime

For the frosting:
3 sticks butter, at room temperature
1 lb confectioner sugar
1 1/2 teaspoon vanilla extract
3 packets True Lime
Green decorating paste or food coloring
Colorful sprinkles, optional

  1. Preheat oven to 350 degrees F. Line 24 cupcake pans with paper liners.
  2. In a large mixing bowl, combine the cake mix, eggs, water, oil, pudding, yogurt, and True Lime packets. Beat on a medium speed for a few minutes. Fill cupcake papers 2/3 full with batter.
  3. Bake for 17-19 minutes until toothpick inserted in center comes out clean. Remove from pan and cool cupcakes
  4. Meanwhile in a large mixing bowl, beat together the butter, confectioners sugar, vanilla and True Lime packets. Add a very small amount of food coloring (1-2 drops) just to get a light green color. Frost cupcakes with a spatula, or with pastry bag. Add sprinkles, if desired!

This recipe is easily adaptable for any True Citrus products. Use orange food coloring and True Orange, yellow food coloring and True Lemon, or pink food coloring and True Grapefruit!
