True Lime Pina Colada Sundae

Description

Try this for a spectacular ending to a summertime meal. Keep the grill warm for the pineapple! Recipe courtesy Diane Henderiks, RD / Dietitian-in-the-Kitchen.

Ingredients

1 ripe pineapple, cut into 1-inch rings
2 cups frozen vanilla yogurt
2 packets of True Lime
1/4 cup shredded coconut, toasted if desired
1/4 cup slivered almonds, toasted if desired
1 box chocolate Sno-Caps, optional
1/4 cup whipped cream
8 fresh cherries, pitted
1 1/2 tablespoons Meyer’s rum, optional (for drizzling)

Directions
  1. Grill 4 pineapple rings over medium heat until lightly browned on each side; about 4 minutes per side. This can also be done in a hot pan on the stovetop.
  2. Remove from heat, coarsely chop, and cover to keep warm.
  3. In small dishes, assemble the sundaes beginning with the frozen yogurt and adding all toppings as desired. Enjoy!
